Whether it is Cabernet Sauvignon, Gewürtzraminer, Concord or Blackberry, true varietal and fruit character is the foundation of great wine. Great flavor in wine begins with great flavor in the fruit. Be it grapes from our own Creekbend Vineyard or fruit purchased from growers, it is essential that the fruit be fully ripe and free of defects. Quite simply, our job is to capture these flavors through careful wine making. Our wine making methods are a mix of the best practices we have observed being used throughout the world. Cold fermentation of fruity whites, barrel fermentation of complex full-bodied whites and aeration of reds during primary fermentation are but a few of the methods we employ. |
